What you need:
2 large onions, chopped
1 large eggplant, cut into strips
4 small zucchini, cut into strips
2 cloves garlic, finely minced
2 large green bell peppers, seeded and cut into strips
6 large tomatoes, cut into wedges
1 1/2 teaspoon dried basil
1 teaspoons salt
1 teaspoon garlic salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, rough chopped
1/4 cup olive oil
1/2 cup Parmesan cheese, freshly grated (optional)
Layer half the vegetables in crock pot in this order: onion, eggplant, zucchini, garlic, green peppers, tomatoes. Repeat layering process with remaining vegetables. Sprinkle basil, salt, garlic salt, pepper and parsley over top. Drizzle with olive oil. Cover and cook on LOW for 7 to 9 hours. Not recommended for a HIGH cook. Cool and chop coarsely. Place in serving bowl and sprinkle with freshly grated Parmesan cheese.

Dealing with sibling rivalry....
Let me just start by saying that I have two little girls, less than a year apart. One minute they are best friends, the next they can't stand each other. I know all about sibling rivalry. About a year ago, it went from the "she's touching me" to full on wars. I, being the overachiever that i am, threw myself into solving this little issue.
First...I used the "Mom" guilt. Oh, you know exactly what I'm talking about! "You only have one sister! You had better be good to her..." You know the routine. Well...that wasn't very effective. So, I sat up one night pondering how i would make them "Play Nice". I decided on "Alone time". I don't care who you are...everyone needs just a little time to enjoy their own company.
Since we homeschool, they are together 24 hours a day. What I did is set aside one hour a day for them to hang out in their rooms...ALONE! They can read, color, play dolls...listen to their Disney songs...anything they'd like...but it has to be alone. They both ALWAYS come out of their rooms happy, and they then LOVE to play together. The "Wars" have dropped down to maybe once every few weeks. I can deal with that! :)

I don't speak for everyone, but I do know what has worked wonders for me.
Three years ago, when my girls were 3 and 4, I took my 4 year old in for an early entrance test for kindergarten. I paid the fee, and she tested way above average. We were convinced that she would be started kindergarten at the fantastic school up the street from our home. We went out and started shopping for school supplies. Got excited for Open houses, and bake sales. Then mid August, we went in to enroll. They had a very high enrollment rate that year and were unable to let the early enterance kids in. WHAT?!?! I was a little angry because my daughter was more prepared than a lot of the "5" year olds. It wasn't fair. I had to delay her because there wasn't room? My big concern was that if I waited that extra year, she was going to get bored. That's when I sat down with my husband and brought up the topic of homeschooling. I didn't want her to wait. I wanted to take her education into my own hands and feed her interest in learning. I did my research, and made the choice.
When I made my first attempt at homeschooling, it was chaos. My girls did NOT want to sit still for "School time". I had taught both of them to read by ages 2 and 3. They both knew basic math, all of their colors, numbers, letters, some crazy history facts, some science. Why couldn't they sit down for "School"? I was a little discouraged. A lot of the books and websites had said to be firm and "Make" them sit there. That's all fine and dandy, but it didn't work for me. Discouraged, would be an understatement. So, I spent the next week trying to think of a way to make this work, and keep the girls interested, but at the same time help them understand that when we are doing school, that's all we are doing.
DING, Ding, DING!!! A light bulb went off....Duhhh, TALK TO THEM!! I was over thinking it so much that the obvious was looking me right in the face.
Yes, they were only 3 and 4 (Almost 4 and 5), but they got it! I sat down with them at the table. I explained to them (in kid terms, of course) why Mommy decided to teach them at home. I explained that everyday at 8:30, we would start "School" time. I explained that school time was important, and we had to take it seriously, but it could still be fun. I told them about all of the fun new things we'd be learning. I told them about the fun "Class Trips" we'd be taking. I explained the "why" and then got them excited to be part of it. I talked to them, and they responded.
I know a few of you are trying to take steps to homeschool, and get discouraged in the beginning. You aren't alone!! We've all been there. Try taking this first step, and watch how your children react. Most kids react in a positive manner if they know the "WHY?".

Keeping stray cats away....
There are a few all natural scent repellents that cats HATE, and will act as a natural repellent. They don't like the scent of citrus, so peels scattered around your house/yard may help to deter them. Coffee grounds give off an odor that cats are very repelled by. Sprinkle in areas where you don't want the cats to go. Lavender oil, citronella oil, and peppermint oil are also scents that cats don't like.

What a day!
I'd be ok if we just skipped today. My husband came home with a high fever and a throat so sore he can't swallow. :( Oh, and the pictures on my posts are there for a visual reference. I have over 1100 posts and I have been working my butt off for almost a year to make this page what it is. If you have been following me for any amount of time, you know that I have been gradually adding my personal pictures. It takes time. The photo's in the FB photo Albums, are from when The Happy Lil' Homemaker was just a FB page. Thank you to all of the wonderful readers that have made this page amazing, and have been so supportive! Split pea and ham soup
"Dishin' It Up" Recipe Swaps! This week we feature meals that freeze well....Don't forget to check out the other great recipes in the recipe swap. They are right below this post....
What you need:
2 1/4 cups dried split peas
What you need:
2 1/4 cups dried split peas
2 quarts chicken broth
1 1/2 pounds ham bone
2 onions, thinly sliced
black pepper to taste
3 stalks celery, chopped
3 carrots, chopped
1 potato, diced
Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

Chinese Chowder
What you need:
4-6 ounces cellophane noodles
2 large cans of chicken broth
3/4 cup rice vinegar
5 tablespoons chili sauce
5 tablespoons of white sugar
4 tablespoons minced garlic
1 pound bean sprouts
1/2 pound sugar peas
1 large onions, sliced
2 bunches green onions
1 can mushrooms, drained
1 can sliced bamboo shoots, drained
2 cans sliced water chestnuts, drained
1 pound of bacon, fried, drained and diced
4 pounds of white fish fillet
1 package frozen Oriental style vegetables
1 large can chow mein noodles
Soak noodles in hot water 25-30 minutes, drain.
Combine chicken broth, vinegar, chili sauce, sugar and garlic in large soup pot. Simmer 10-15 minutes.
Toss together bean sprouts, peas, onions, mushrooms, bamboo and water chestnuts. Set aside.
Heat a pan and fry fish fillets just until done. Drain on paper towels. Add cellophane noodles, and all veggies to broth mixture. Simmer until vegetables are tender-crisp. Top with fried fish, bacon and chow mein noodles.

Removing Crayon from Plastic....
For containers:
Add a little dishsoap to the container, and pretend you are greasing a pan. Rub that dishsoap all over the area with crayon on it. Next, Pour HOT (I boil a teapot full of water) into the container. Allow to sit for 30-ish minutes. Then use an old wash cloth to wipe down the inside. The hot water will help the wax (And any left over stain) dissolve.
Walls: Magic erasers are GREAT for this. If you don't have one on hand, use HOT soapy water and a terry washcloth. The tip to both of these tips is to not rub the wall to hard. Be patient, and gently scrub. It will come off. If you rub too hard, the paint will come off along with the crayon!

Review! Hot Wheels Nitro Speeders Review and Giveaway!

Not only were my kids excited to try this out, so was my husband.
The package arrived around 4 in the afternoon, and by 5, everyone was addicted to these mini remote control racers. At first, I wasn't sure how well they were going to hold up to two kids and my husband. I must say, I was impressed. When charged, those little things seemed to run forever. They crashed into walls, flipped over rugs, and kept on going.
At one point my husband actually moved the kitchen table so he had a bigger "Track"...haha!
One thing I really liked about this was that there's a spot for you to store your mini racer, in the remote!! This has helped to avoid a lost little car.
If you have a child, these will be a hit! The run around $30, which, in my opinion, is a little high, BUT if your kids play with them as often as mine, do...it would be worth the investment. You can learn more about then at the Hotwheels website.

"Dishin' It Up" Recipe Swaps! Homemade BBQ Sauce..EASY!!
1 teaspoon of chili powder
1 tablespoon of molasses
1 teaspoon of garlic powder
1/4 cup of apple cider vinegar
2 tablespoons of Worcestershire sauce
1/2 cup of brown sugar
1 finely chopped onion
2 tablespoons of steak sauce
Salt and pepper to taste
Mix together all ingredients in a large saucepan. Bring to a boil, then reduce heat and let simmer for 10 minutes. Let cool. Makes about 18-20 ounces.

Strawberry Glaze Cake Filling
2 1/ cups strawberries (Caps cut off and sliced)
1 cup sugar
2 1/2 tablespoons cornstarch
2 1/2 tablespoons water
In a saucepan, heat strawberries and sugar on medium heat. When all of the sugar has dissolved, remove from heat. In a small bowl, mix together cornstarch and water until smooth. Add cornstarch mixture to the strawberries, and stir well. Return to medium heat, and cook for another 5-7 minutes or until sauce thickens and strawberries are soft. Strain seeds through a fine strainer. Use the back of a spoon to push strawberries through. Allow to cool for 2 hours. This should create a nice clean glaze with a real strawberry flavor.
