Zucchini Bread....

What you need:
2 1/2 cups grated zucchini
3 teaspoons vanilla extract
1 1/4 cups vegetable oil
5 teaspoons ground cinnamon
1 1/4 teaspoon baking soda
4 eggs
1 1/4 teaspoon baking powder
2 1/2 cups white sugar
4 cups all-purpose flour
1 1/4 teaspoons salt
1 cup chopped walnuts (Optional)

Preheat oven to 325. Grease or spray and flour two loaf pans.
Sift dry ingredients. In a bowl, beat the eggs, oil, vanilla, and sugar  Add in the dry ingredients and beat well. Fold in the zucchini. (If adding nuts, fold them in as well) Pour batter into prepared loaf pans.
Bake until toothpick inserted in the center comes out clean (Approx. 45-55 minutes). Let bread completely cook before removing from loaf pan.
